This data has indicated 1% of the population in these markets are affected by coeliac disease. This disease is an allergy to gluten which is one of the major protein strains making up wheat and wheat based flours. Sufferers of this disease have to remove wheat from their diets. 

Another sector is wheat fibre intolerance which is 1% of the total population. Again removal of wheat from a sufferer’s diet occurs.
